quick and easy icing

Posted on February 22, 2012

I cringe whenever I see the icing you can buy in the baking aisle. Only 2 tablespoons has almost 2g trans fat– ridiculous!! That’s insane, especially since it is so easy to make your own. I promise. It takes less than 10 minutes to make as much or as little icing as you need {or want}.

No, this icing is not healthy. But it’s not terribly bad for you either. Everything in moderation! And moderation includes a little icing every now and then.

This icing is great to ice chocolate cupcakes or to decorate these sugar cookies. We did it today, and if you’re wondering if I’ve been saving these pictures and this post since December, I haven’t. We just only have green & red sprinkles in the house and it was raining and we needed to make cookies. So we made Christmas cookies in February…they taste just as good whatever color sprinkles you decide to use {or don’t use; your choice}.

Easy Butter-cream Icing

  • 1¼ cup powdered sugar
  • ¼ tsp vanilla extract
  • 2 TBSP butter
  • 1-2 TBSP milk, any kind {start with 1 TBSP and increase as needed}

Combine all the ingredients together using a mixer or sturdy spatula. {I use a spatula, so I don’t have much to clean after}. Add more milk if you want a thinner consistency. Add more powdered sugar if you want a thicker consistency.

Make sure to cover when not in use, so it doesn’t dry out. I keep it covered in a container in the refrigerator (since there is butter and milk in it). If you need to, just add a little more milk to make it spreadable again.

Please excuse the ugly pictures…
